Philippe Excoffier’s Soufflé au Chocolat

Philippe Excoffier’s Soufflé au Chocolat
 
Makes 6 Soufflés
Ingredients
  • 2.5 ounces (70 grams) quality chocolate, a 50/50 mix of 50% cacao and 70% cacao
  • ¼ cup (57 grams) unsalted butter
  • 4 large egg yolks (75 grams)
  • 6 large egg whites* (180 grams)
  • 1 tablespoon (12 grams) granulated sugar, plus more for coating
  • Fresh strawberries, to serve
Instructions
  1. Preheat oven to 375°F (190°C). Butter 6 (8-ounce) tall soufflé molds, and coat with sugar.
  2. In the top of a double boiler, combine chocolate and butter. Heat over simmering water until melted. Remove from heat; gently fold in egg yolks. Let cool for 5 minutes.
  3. In a large bowl, whisk together egg whites and sugar until stiff peaks form. Gradually fold egg whites into cooled yolk mixture. Divide batter among prepared molds, and wipe rims clean using the side of your thumb. Place molds well apart on rack toward top of oven.
  4. Bake for 11 minutes. Serve warm with strawberries.
Notes
Philippe uses aged egg whites.

  1. What are the dimensions for the souffle mold? I have 4″ x 2″ but that doesn’t seem to qualify as tall. Where can I buy y’all ones?
