Concord Grape Jam
- 2 cups (300 grams) Concord grapes
- ½ cup (100 grams) granulated sugar
- 1½ tablespoons (22.5 grams) water, divided
- ⅛ teaspoon kosher salt
- ⅛ teaspoon ground cloves
- 1½ teaspoons (4.5 grams) cornstarch
- In a medium saucepan, bring Concord grapes, sugar, 1 tablespoon (15 grams) water, salt, and cloves to a boil over medium heat. Reduce heat to low, and simmer for 10 minutes. Press mixture through a fine-mesh sieve into a bowl; discard solids. Return mixture to saucepan.
- In a small bowl, stir together cornstarch and remaining ½ tablespoon (7.5 grams) water. Add cornstarch mixture to saucepan. Simmer, stirring constantly, until mixture is slightly thickened, about 3 minutes.
