Cream Cheese Filling
 
Ingredients
  • 12 ounces (340 grams) cream cheese, room temperature
  • ¼ cup plus 2 tablespoons (85 grams) unsalted butter, room temperature
  • 4 teaspoons (16 grams) vanilla extract
  • ¾ teaspoon (2 grams) kosher salt
  • 9⅓ cups (1125 grams) confectioners’ sugar
Instructions
  1. In the bowl of a stand mixer fitted with the paddle attachment, beat cream cheese and butter at medium-low speed until smooth and creamy, about 1 minute.
  2. With mixer on low speed, slowly add confectioners’ sugar to cream cheese mixture, beating until combined after each addition and stopping to scrape sides of bowl. Beat in vanilla and salt until combined.
  3. Increase mixer speed to medium, and beat until light in color and fluffy, about 2 to 3 minutes, stopping to scrape sides of bowl.
  4. Transfer to a piping bag fitted with a round #803 tip. Set aside until ready to use.
