Brown Sugar Rum Sauce
Makes about 2⅓ cups
  • ⅔ cup (147 grams) firmly packed dark brown sugar
  • 3 tablespoons (36 grams) granulated sugar
  • 1 cup (200 grams) melted vanilla ice cream
  • ½ cup (113 grams) unsalted butter, cubed and softened
  • ⅓ cup (113 grams) dark corn syrup
  • 1 teaspoon (3 grams) kosher salt
  • ¼ teaspoon ground cinnamon
  • 3 tablespoons (45 grams) dark rum
  1. In a medium saucepan, stir together sugars, ice cream, butter, corn syrup, salt, and cinnamon. Bring to a boil over medium-high heat; reduce heat to medium-low, and simmer, stirring frequently, for 2 minutes. Remove from heat; stir in rum. Return to heat, and bring to a boil over medium-high heat; cook, stirring frequently, for 1 minute. Remove from heat, and pour in to a small heatproof bowl. Let cool for 15 minutes before using, stirring occasionally.
