Concord Grape Jam
 
Makes 1½ cups
Ingredients
  • 2 cups (300 grams) Concord grapes
  • ½ cup (100 grams) granulated sugar
  • ½ cup (120 grams) Concord grape juice
  • 1 teaspoon (5 grams) agar powder
  • 1 teaspoon (5 grams) sherry vinegar
  • ½ teaspoon (2 grams) vanilla extract
  • ⅛ teaspoon kosher salt
Instructions
  1. In the container of a blender, purée grapes. Strain into a medium saucepan, discarding solids. Add all remaining ingredients, and bring to a boil over medium heat. Cook for 5 minutes, whisking frequently. Let cool completely before serving.
