Chocolate Filling
Makes about 4 cups
  • 2 cups heavy whipping cream, chilled
  • ⅔ cup (80 grams) confectioners’ sugar
  • ½ cup (43 grams) unsweetened cocoa powder
  • 1 teaspoon vanilla bean paste
  1. In the bowl of a stand mixer fitted with the whisk attachment, beat cream, confectioners’ sugar, cocoa, and vanilla bean paste at medium-high speed until stiff peaks form, 2 to 3 minutes.
