Meringue Topping
- 6 large egg whites
- 1¼ cups (250 grams) granulated sugar
- 1 teaspoon (3 grams) kosher salt
- ½ teaspoon (1 gram) cream of tartar
- Bring a medium saucepan of water to a simmer over medium-high heat. In the bowl of a stand mixer fitted with the whisk attachment, combine all ingredients. Place bowl over pan of simmering water. Cook, whisking constantly, until sugar is dissolved, about 5 minutes. Return bowl to mixer; beat at high speed until stiff glossy peaks form, 5 to 8 minutes.
