Almond Cream
 
Makes about 1 cup
Ingredients
  • ½ cup (48 grams) almond flour
  • ¼ cup plus 1 tablespoon (62 grams) granulated sugar
  • ¼ cup (57 grams) unsalted butter, softened
  • 1 large egg yolk (19 grams)
  • 2 teaspoons (6 grams) all-purpose flour
  • ¼ teaspoon kosher salt
  • ¼ teaspoon lemon zest
  • ¼ teaspoon (1 gram) almond extract
Instructions
  1. In the bowl of a stand mixer fitted with the paddle attachment, beat all ingredients at medium speed until pale in color and fluffy, about 3 minutes. Cover and refrigerate for at least 3 hours before using.
