Coconut Filling
 
Makes about 4 cups
Ingredients
  • ½ cup (100 grams) granulated sugar
  • 3 tablespoons (24 grams) cornstarch
  • ⅛ teaspoon kosher salt
  • 1 cup (240 grams) whole milk
  • 1 cup (240 grams) unsweetened coconut milk
  • 4 large egg yolks (74 grams)
  • 1 cup (50 grams) sweetened flaked coconut
  • 1 teaspoon (4 grams) vanilla extract
Instructions
  1. In a medium saucepan, combine sugar, cornstarch, and salt; whisk in milk, coconut milk, and egg yolks. Cook over medium heat, stirring constantly, until thickened, about 10 minutes. Remove from heat; stir in coconut and vanilla. Use immediately.
