Vanilla Cream Cheese Filling
- ½ cup (112 grams) cream cheese, softened
- ¼ cup (50 grams) vanilla sugar
- ¼ cup (30 grams) confectioners’ sugar
- 1 large egg yolk (19 grams)
- 1 tablespoon (8 grams) all-purpose flour
- ½ tablespoon (9 grams) vanilla bean paste
- ½ teaspoon (2 grams) vanilla extract
- ¼ teaspoon kosher salt
- In the bowl of a stand mixer fitted with the paddle attachment, beat cream cheese at medium speed until smooth. Add sugars and all remaining ingredients, and beat until smooth. Use immediately.
