Preheat oven to 350°F. Line bottom and sides of a 9-inch square baking pan with foil, letting 2 to 3 inches extend over sides of pan; lightly spray with cooking spray.
In a large microwave-safe bowl, microwave butter and chopped chocolate on high in 30-second intervals, stirring between each, until melted and smooth (1½ to 2 minutes total). Whisk in sugar. Add eggs, one at a time, whisking until combined after each addition. Whisk in flour, baking powder, and salt. Gently stir in chocolate morsels and vanilla. Pour batter into prepared pan.
Bake until a wooden pick inserted in center comes out clean, 30 to 35 minutes. Let cool in pan for 1 hour. Using excess foil as handles, remove from pan, and cut into small triangles.
Layer brownie triangles and Caramel Sauce in 8 coupe glasses. Garnish with Caramel Sauce, Chocolate-Covered Pecans, and ice cream. Serve immediately.
