Apple Oatmeal Skillet Cake
 
Makes 1 (10-inch) cake
Ingredients
  • 1 cup (80 grams) old-fashioned oats
  • 1 cup (240 grams) boiling water
  • ½ cup (113 grams) plus 1 tablespoon (14 grams) unsalted butter, cubed, softened, and divided
  • ½ cup (120 grams) whole milk, room temperature
  • 1 cup (220 grams) firmly packed light brown sugar
  • ¼ cup (50 grams) granulated sugar
  • 2 large eggs (100 grams), room temperature
  • 2 teaspoons (8 grams) vanilla extract
  • 1½ cups (188 grams) all-purpose flour
  • 1½ teaspoons (3 grams) ground cinnamon
  • 1 teaspoon (5 grams) baking soda
  • 1 teaspoon (5 grams) baking powder
  • ½ teaspoon (1.5 grams) kosher salt
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cardamom
  • ⅛ teaspoon ground allspice
  • 1 large apple (185 grams), diced
  • ½ cup (57 grams) chopped walnuts
  • 1 medium apple (140 grams), thinly sliced
  • Oat Streusel (recipe follows)
Instructions
  1. In the bowl of a stand mixer fitted with the paddle attachment, stir together oats, 1 cup (240 grams) boiling water, ½ cup (113 grams) butter, and milk by hand. Cover with plastic wrap, and let stand for 30 minutes.
  2. Preheat oven to 350°F (180°C). Place remaining 1 tablespoon (14 grams) butter in a 10-inch enamel-coated cast-iron skillet, and place skillet in oven until butter is melted. Carefully remove skillet from oven, and brush sides and bottom of pan with melted butter.
  3. Stir oats mixture. With mixer on medium speed, add sugars, eggs, and vanilla, beating until well combined, about 2 minutes. Add flour, cinnamon, baking soda, baking powder, salt, nutmeg, cardamom, and allspice, beating just until combined. Fold in diced apple and walnuts. Spoon batter into prepared skillet. Place sliced apple in center, and place Oat Streusel around edges.
  4. Bake until a wooden pick inserted in center comes out clean, 1 hour to 1 hour and 5 minutes. Let cool for 10 minutes. Serve warm.
