Chocolate Chip Ice Cream Sandwich Cookies
 
Makes about 24
Ingredients
  • ½ cup plus 1 tablespoon (127 grams) unsalted butter, softened
  • 2 cups (440 grams) firmly packed dark brown sugar
  • ⅓ cup (67 grams) granulated sugar
  • 2 large eggs
  • 7 tablespoons heavy whipping cream 1 teaspoon vanilla bean paste
  • 4 cups (500 grams) all-purpose flour 1 teaspoon (5 grams) baking soda
  • 1 teaspoon (3 grams) kosher salt
  • 2 cups (340 grams) semisweet chocolate morsels
Instructions
  1. Preheat oven to 350°F.
  2. In a large bowl, beat butter and sugars with a mixer at medium speed until fluffy, 3 to 4 minutes, stopping to scrape sides of bowl. Add eggs, cream, and vanilla bean paste, beating until combined. In a medium bowl, whisk together flour, baking soda, and salt. Gradually add flour mixture to butter mixture, beating until combined. Fold in chocolate morsels.
  3. Divide dough in half. Roll each piece of dough between two sheets of parchment paper to ¼-inch thickness. Remove top pieces of parchment paper, and transfer bottom pieces and dough onto baking sheets.
  4. Bake until slightly puffed and just beginning to brown, 10 to 13 minutes. Using a 2½-inch round cutter, cut rounds while still hot. Let cool on pans before separating rounds from scraps.
