Rhubarb Filling
 
Makes about 3½ cups
Ingredients
  • ¾ cup (150 grams) granulated sugar
  • 3 tablespoons (24 grams) cornstarch
  • ¼ teaspoon kosher salt
  • 1½ pounds (680 grams) fresh rhubarb, tough strings removed and cut into 1-inch pieces (about 3 cups)
  • Zest of 1 medium orange
Instructions
  1. In a large bowl, stir together sugar, cornstarch, and salt. Add rhubarb and zest, tossing to coat.
