Everything Bagel Seasoning
Makes about ½ cup
Ingredients
- 2 tablespoons (18 grams) white sesame seeds
- 2 tablespoons (18 grams) black sesame seeds
- 1 tablespoon (9 grams) poppy seeds
- 2 teaspoons (12 grams) coarse sea salt
- 2 teaspoons (8 grams) dried minced garlic
- 2 teaspoons (8 grams) dried minced onion
Instructions
- In a small bowl, stir together all ingredients. Store in an airtight container for up to 6 months.
Notes
USE IT: Crunchy with a trio of seeds and fragrant with dried alliums, this Everything Bagel Seasoning helps us create our iconic Basic Bagels, but you can also sprinkle this aromatic topping on any savory bread recipe to take it to the next umami level, including our Four-Cheese Pull-Apart Milk Bread and Cheddar and Onion Beer Bread. All of these recipes are found in our September/October 2019 issue.
Chai Spice
Makes about ⅓ cup
Ingredients
- 3 tablespoons (18 grams) ground cinnamon
- 1½ tablespoons (9 grams) ground ginger
- 1 tablespoon (6 grams) ground cloves
- ½ teaspoon (1 gram) ground cardamom
- ½ teaspoon (1 gram) ground black pepper
Instructions
- In a small bowl, stir together all ingredients. Store in an airtight container for up to 6 months.
Notes
USE IT: Heavy on the cinnamon but with lingering notes of ginger and cardamom, this chai blend has a softer bite than most. We specifically call for it in our Chai Raisin Bagels but consider subbing it in for the 1½ teaspoons cinnamon called for in the Carrot Cake Loaf or for the 1 teaspoon Chinese five-spice powder in our Sweet Potato Bars. All of these recipes are found in our September/October 2019 issue.
Pumpkin Spice
Makes about ½ cup
Ingredients
- ¼ cup (24 grams) ground cinnamon
- 1 tablespoon (6 grams) ground ginger
- 1 tablespoon (6 grams) ground nutmeg
- 1½ teaspoons (3 grams) ground allspice
- 1½ teaspoons (3 grams) ground cloves
Instructions
- In a small bowl, whisk together all ingredients. Store in an airtight container for up to 6 months.
Notes
USE IT: Featuring a warm quintet of fall spices, our pumpkin spice blend comes in hot with the cinnamon and ginger and finishes strong with the sweet-smelling notes of nutmeg, allspice, and cloves.
