Our Merriest Holiday Cookies and Bars

5. Peppermint Nanaimo Bars

Blending the flavors of a wintry mocha with a Canadian classic, these Nanaimo bars receive a boost from an espresso-spiked ganache, a dose of peppermint extract, and a lightly spiced cinnamon filling. At the base, rich macadamia nuts and sweet coconut flakes add a satisfying element of chew.

6. Mincemeat Rum Chocolate Sandwich Cookies

Edd Kimber of The Boy Who Bakes loves Oreo sandwich cookies, and over the years, he’s had fun playing around with different flavored homemade versions. This one hearkens back to a British holiday classic, the mince pie. Originally made with meat (hence the term “mince”), they’re individual pies filled with a syrupy spiced fruit filling. These sandwich cookies follow the same pattern, served alongside a rum-infused buttercream. If you can get ahold of ready-made mincemeat, feel free to use that instead of making your own.

7. Cardamom-Spiced Cookie Bars with Eggnog Cream Cheese Frosting

Inspired by a frothy glass of eggnog, these simple cookie bars by Becky Sue Wilberding, are warmly spiced with cardamom and slathered in a rich Eggnog Cream Cheese Frosting. Garnishing with freshly grated nutmeg makes them look and taste just like eggnog.
