For Majed Ali, the baker behind The Cinnaman, his baking journey began with a simple baked good perfumed with his blog’s namesake spice, aromatic cinnamon. Since that seminal, romantic bake, Majed has created in his blog a sweet haven for both Arabic- and English-speaking bakers. Highlighting the Middle Eastern flavors Majed was raised with, his site features pies and tarts imbued with rose water and saffron, cakes nutty with tahini, and cookies rich with ratab, or fresh dates, like the ones he grows on his family farm. In fact, if there’s one rich flavor thread that runs throughout Majed’s site, it’s that caramel taste of dates in syrup, paste, or whole form.

You’ll also find recipes for banana bread and a peach galette, Western desserts he became acquainted with while he was staying in Houston, Texas. As well as offering a first-hand look at the luscious flavors signature to the United Arab Emirates, Majed shares redone delicacies enjoyed during Muslim holidays. He’ll serve up a banana-flavored alalbeh, a kind of Middle Eastern flan, a dish he enjoyed as a child during Iftar, the end of the Ramadan fast, or a Rose Hibiscus Strawberry Icebox Pie, a nod to the rose syrup drink also served at the close of the Ramadan fast. “I want people to see this warm side of Muslim hospitality. Our food is a reflection of that,” he says.
